Strawberry Cheesecake

Today I am going to share my favorite dessert, Strawberry Cheesecake! This is one of those family recipes and I have been eating for as long as I can remember! My mom makes it almost every time we come home and I honestly can never get enough.


Mix together:
-1 cup flower -1/2 cup melted butter -1/2 cup chopped nuts -1/4 cup packed brown sugar
Pack into a 9X13 inch pan and back for 15 minutes until brown. Cool, then crumble in the pan.


This is basically a picture of what not to do! Normally you would chop of the nuts finer but I still need to invest in a chopper (does anyone else have a huge list of kitchen gadgets that they want?) Also bake it till it's a little browner than in this picture.

Mix together until smooth:
-2 8oz. packages cream cheese -2 cups powdered sugar -2 package prepared Dreamwhip (2 come in a box)
Spread over crumbs and then layer with 2 packs of sliced strawberries.


Make 1 package of Strawberry Danish Dessert. Use 2 cups of water and follow cooking directions on box. Pour on top of dessert and put in the refrigerator for 3-4 hours.

Ingredients
  • 1 cup flour
  • 1/2 cup chopped nuts
  • 1/2 cup packed brown sugar
  • 1/2 cup melted butter
  • 8 oz. cream cheese
  • 1 cup powdered sugar
  • 1 package prepared dream whip
  • 2 packages strawberries
  • 1 package strawberry danish dessert
Instructions
  1. Mix first four ingredients, pack into bottom of 9X13 inch pan, and bake until brown.
  2. While the crust is cooling, mix the cream cheese, powdered sugar, and prepared dream whip until smooth.
  3. Once the crust is cooled, crumble it in the bottom of the pan and then spread the cream cheese mixture on top.
  4. Slice the strawberries and lay them on top.
  5. Using 2 cups of water make the the strawberry danish dessert according to the directions on the box.
  6. Pour it on top and then let it set for 3-4 in the refrigerator.

Sam thinks my family and I are crazy because we have no problem eating this for dessert! And I would be lying if I said I didn't eat this for breakfast this morning!

Where Samberly Came From

How We Met -told by Sam
During the summer of 2011 I got a job working at Dinaland golf course in Vernal, Utah. My goal was to save some money and work on my tan so I would be prepared to go back to UVU and jump into the dating pool. While I did get a tan my money began disappearing quite rapidly when I met Amberly. From the moment I saw her I knew Amberly wasn't just an ordinary girl. She was and still is the most incredibly beautiful person I have ever seen. With her light red-brown hair and blue-grey eyes that sparkled with joy and excitement of life, I could hardly take my eyes of her. To top it all off she had the most gorgeously accented freckles, each one adding to her beauty. I knew I had to meet her but was so intimidated by her charm and perfect smile. So I did what any socially awkward person would do and began stalking her. I would drop in at the club house where she worked and get refills for my water cup which I had just filled and dumped within a fifteen minute stretch just to try and catch her eye. She probably thought I was a camel but I couldn't help myself. 
Finally I got the courage to talk to her. I was so nervous. She was so pretty and couldn't possibly be interested in me. I was no stranger to rejection and knew that this would surely be the worst case if things didn't go well. Somehow I managed to get through our first encounter without scaring her off and eventually got to the point where I got her to go golfing with me. I couldn't believe that I was going to spend a few hours with her. The idea was so exciting that I forgot to get her number. All I could do was hope she didn't stand me up. The day of our first date came and and I was overcome with relief when I saw Amberly waiting for me at the clubhouse. She looked so amazing all decked out in her golf outfit and I knew I was in trouble. Yes she did best me horribly that day but somewhere between the 16th and 18th hole I thought of the most clever thing. When we got back to the clubhouse I told Amberly that she had to play me until I beat her and to my surprise she agreed. A few weeks before we married I finally beat Amberly at a round of golf. Being freed from our agreement Amberly decided to keep me around and I thank God everyday that she did. 
We have gone through our ups and downs as everyone has but the downs aren't as bad when I'm with her and the ups are unexplainably joyous. In honor of that first date we go golfing each year on the anniversary and it always brings back fond memories. Gone is my tan and my money but Amberly is worth it all.


How He Proposed 
Sam and I had our first kiss on the shore side of a local lake while watching the sun set. You may wonder what that has to do with our proposal story but it will make sense. It was really early on a Saturday morning, maybe around 5. Sam picked me and starting driving. I asked where we were going but he wouldn't tell me. Eventually I figured out that we were heading towards the lake and wondered if he was going to propose. I started looking for a ring which I immediately got in trouble for :). We got to the lake and he set up a blanket so we could eat breakfast. We walked along the beach after that and at one point he stopped and told me how much he loved me. He then got down on one knee and asked me to marry him. I of course said yes and then he put a ring on it :).

Where Team Samberly Came From
I can't remember when exactly we came up with Samberly as our nick name. I think we may have been playing a game in which we were on the same team. We realized that Sam and Amberly fit together perfectly as Samberly. We thought we were geniuses! We eventually added team to the beginning because we liked the meaning of it. We always want to work together for a common purpose. From there it just became a thing. We are team Samberly and as we have kids our team would just get bigger. Now there are three of us and we could not be happier!

GRAD SCHOOL!

Sam graduated UVU last December. Since then he has been applying for graduate schools to become an Occupational Therapist. It has been a very long wait. I think he started the whole process last summer. We didn't think we would hear until the beginning of May so when Sam got the phone call early we were so so happy! It has been hard not knowing where we will be living the next year and not knowing where our life is going. Finally being able to know and plan is really exciting. 

We will be moving 1,250 miles away to Springfield, Missouri. The school starts August 17th (which just happens to be Sams 26th birthday). We will be moving there sometime the end of July beginning of August and be there for at least 2 1/2 years.

I'm really excited and nervous at the same time! There are a lot of cool things to see back there and we will love exploring. Being so far from family will definitely be hard though. I am very close to my family and love spending as much time with them as possible so I just have to trust that Heavenly Father knows best. But we will be making as many trips as financially possible!

We did a lot of researching over the weekend but did get out to enjoy the wonderful spring weather. It was really funny because for a while Dax was totally freaked out by the plants and flowers. If he got too close to them or even looked at them he would freak out!

Babes First Easter

Daxton had his first Easter and was completely spoiled! Grandma made his cute little Easter basket! And my little cowboy his own pair of boots. I can't wait for him to grow into them! 


My mom always does an awesome Easter egg hunt for us and we always love it! We have been in chocolate heaven for the past week!


Easter weekend Daxton started solids! I love how much he loves food :) He didn't really know what to do with it but was really liking it! 



He loved playing with the Easter eggs but really wanted the candy :) I can tell he is gonna have a sweet tooth!


We loved being out of the city and Dax being able to explore different things. It was nice to recharge! We were extremely lucky to be able to celebrate the Resurrection of our Savior and hear from our wonderful leaders! There were a lot of things that I needed to hear and am very grateful that I get the chance to start over and be better.
